Farmers Market Salad- Make it your Own! 

I love farmers markets! Who wouldn’t? The sights, the sounds, the food and, of course, the people. It is truly a gift to take the time just to walk through a local market and take it all in. Why go to a store when you can have the (outdoor) experience of talking with the people that grow your food? Knowing where your food comes from is a great first step towards a healthy diet.

This week I was inspired to publish a salad recipe with some finds from this weeks market. Who wouldn’t love a fresh cucumber salad with meyer lemon dressing?

I like to make my salads colorful AND I add fruit to my salads.

Be creative with what you find! Make it fun.

When I eat salad it is normally without lettuce these days. I do lots of the fruity veggies and root vegetables (cucumbers, beets, red and yellow peppers, potatoes, zucchini, tomato, etc). Also, I make sure to have some cheese or an egg with my vegetables so that the meal is balanced.

Buy local, organic, and seasonal food. Keep things simple and you can’t go wrong. Here is this weeks recipe. Feel free to add what ever you find next week at your local market. Be inspired by what you find. Also, I thought I would let you see some photos of this weeks market run. Let me know what you think.

Farmers Market Salad

Ingredients:

  • 1 medium carrot, peeled and sliced 1/4 -inch thick
  • 6-12 small potatoes- boiled and sliced
  • 1  large (ripe) tomato, chopped
  • 1/2 cup of yellow cherry tomatoes cut in half
  • 1/2 red onion, sliced in half-rounds
  • 1/2 pound feta cheese, 1/2-inch diced (not crumbled) or any goat cheese
  • 1/2 cup cherries, cut in half (remove the pit)
  • You can add beets, or any other fruit that you like
  • 1 – 2 hard boiled chicken (or 4 quail) eggs or poached egg too!!

For the vinaigrette:

  • 1/2 cup of meyer lemon juice
  • 1/4 cup of extra virgin olive oil
  • add white sea salt to taste

Directions:

Place the cucumber, potatoes, tomatoes and red onion in a large bowl. Or whatever fruits and vegetables you like!

For the vinaigrette, whisk together the lemon and olive oil in a small bowl add salt to taste. Pour the vinaigrette over the vegetables. Add the feta and cherries and toss lightly. Set aside for 30 minutes to allow the flavors to blend. Add poached (or hard boiled eggs last). Serve at room temperature.

I loved the salad and ate the loquots for dessert. A great dinner for a nice spring day. Eating the salad brought me right back to the mornings walk through the market. Divine!
